Title: Chocolate Tapioca

2 Eggs; separated
2c;water
3 Single serving envelopes low
  Calorie hot cocoa mix
2tbQuick cooking tapioca
1tbSugar; optional
  Pn salt or cream of tartar
2tsVanilla

Blend egg yolks with 1/2 cup of the water in a nonstick saucepan. Stir in cocoa mix, tapioca, sugar and remaining 1 1/2 cups water. Cook and stir over moderate heat until mixture simmers. Remove from heat and cool. Beat egg whites with salt or cream of tartar until soft peaks form. Stir vanilla into tapioca mixture. Gently, but thoroughly, fold in egg whites.
